Great IDEA: Recipes for a Happy and Healthy 4th of July



The 4th of July is upon us and for many, celebrating our nation’s independence means food, family, and fun. From delicious family recipes to evening fireworks displays, what’s not to love? As a recent National Healthy Schools Award winner, and part of IDEA’s Healthy Kids Here initiative to promote a healthy and active lifestyle for our students and increase student access to healthy and nutritious foods, we have compiled some of our favorite nutritious, kid-friendly 4th of July recipes below from our Healthy Kids Here Cookbook, coming to all IDEA families in August.

Jicama Apple Slaw (V)

Serves: 6    Time: 10 minutes, plus 1 hour of refrigeration

Ingredients:

  • 2 cups jicama, peeled and julienned
  • 1 medium Honeycrisp apple, grated
  • 1 medium carrot, grated (about ½ cup)
  • 2 tablespoons green onion, finely sliced (green part only)
  • 1 tablespoon fresh lemon juice
  • ½ cup Greek yogurt with honey
  • 1 teaspoon fresh ginger, grated
  • Pinch of salt

Directions:

  1. In a large mixing bowl, combine jicama, apple, carrot, and green onion; gently mix
  2. Add fresh lemon juice and stir
  3. In a separate bowl, mix together yogurt, ginger, and salt
  4. Pour the yogurt mixture over the salad and mix well
  5. Refrigerate for at least 1 hour before serving

Grilled Hawaiian Barbeque Chicken in Foil

Servings: 4         Time: 25 minutes

Ingredients

·      4 6-ounce boneless, skinless chicken breasts

·      1 cup of your favorite barbeque sauce

·      1 8-ounce can of pineapple slices in 100% juice

·      1 tablespoon reduced sodium soy sauce

·      1 teaspoon garlic, minced

·      1 red bell pepper, cubed

·      2 medium zucchini, sliced

·      green onions, for garnish

Directions

1.    Heat grill to medium heat. Cut 4 sheets, enough to wrap the chicken and veggies, of heavy duty aluminum foil. Place chicken on center of aluminum foil, divide the veggies, and add a couple pineapple slices into each packet.

2.    In a bowl, whisk together barbeque sauce, juice from the can of pineapple slices, soy sauce, and garlic. Spread about 2 tablespoons of the sauce on the chicken, and make sure to reserve about ¼ cup.

3.    Place chicken packets onto grill, and grill for 13-15 minutes flipping at about 7 minutes. To serve, carefully open packets, baste with reserve sauce and garnish with green onions.

Cucumber Watermelon Salad Recipe (Vegan)                                                            

Serves: 4            Time: 15 minutes

Ingredients

  • 2 ½ tablespoons lime juice
  • 2 tablespoons granulated sugar
  • ½ teaspoon salt
  • ¼ cup minced fresh parsley
  • 2 medium unpeeled cucumbers, washed, ends removed, sliced lengthwise then sliced crosswise
  • 3 cups watermelon cut in 1-inch cubes

Directions

  1. Combine the lime juice, salt and sugar in a mixing bowl; whisk together. Stir in parsley.
  2. Add cucumbers; toss with a rubber spatula, coating all cucumber pieces. Fold in watermelon gently.
  3. Cover, set aside and allow juice from the watermelon to mix with the other juices. Stir gently and let stand at room temperature 45minutes before serving.
